The ideal spice blend for slow-cooked or braised dishes with lamb, young goat, chicken or pork, Zanzibar Island Spice combines salt, sesame seed, fennel, coriander, black pepper, anise, cinnamon, ginger, clove, garlic, onion and star anise. Rub onto meat coated with a little oil and leave to marinade for an hour or two before grilling, or dry fry a generous grinding before adding to couscous with slivers of almond and dried apricots.
